Eggs are yet another casualty of the diet dictocrats. As low-fat diet propaganda grew in the 80’s and 90’s the egg’s reputation got, well, scrambled.

The good news is the egg is back! 

Filled with at least trace amounts of every vitamin and mineral known to man, save for Vitamin C, whole eggs are a great food to welcome back to your plate. That’s right, whole eggs. More than just protein eggs pack B-vitamins, phosphorus, biotin, iron, selenium, vitamins A, D, E, K, calcium and more. 

What about the fat you say? WE NEED FAT! Especially helpful is that fat enables the absorption all those great vitamins. The hype about cholesterol and saturated fat in eggs is false. High levels of omega-6 fats from processed foods, including those marketed as healthy by the diet industry are the real culprits when it comes to poor heart health. 

It’s common sense to eat what nature gives us the way she supplies it. Befriend your body and those generous chickens by choosing organic, pasture raised eggs. You’ll get bang for your buck with higher levels of omega-3s and you’ll be advocating for a kinder, more sustainable food system.

Tips for enjoying eggs:

- Scramble in onions, peppers and potatoes for a complete meal.

- Serve up one fried egg on whole grain toast with thick slices of tomato and red onion.

- Make quick Huevos Rancheros! Top scrambled eggs with black beans, salsa, and cheddar cheese.

- Make a green frittata packed with fresh spinach.
