This week summer BBQs are on my mind.  Having spent the 4th of July weekend on a friend’s roof deck in Boston and my parents’ backyard in Pennsylvania, I’ve enjoyed many nights out by the grill cooking up healthy, delicious foods. The below grill side dishes are inspired by friends and family members over the past week… enjoy and please share some of your own healthy side dish ideas!

Beet Salad

12 golden beets
2 T. apple cider vinegar
1 shallot, minced
2 t. dijon mustard
1/2 cup olive oil
Basil, sea salt, pepper
Goat cheese

Boil beets with skin on for 45 minutes or until tender.  Plunge into cold water.  The skin of the beets will easily slide off. Chop into quarters.  Whisk or blend together all remaining ingredients except goat cheese and basil.  Pour on dressing and garnish with goat cheese and basil. Serve cold.

Corn Salad

8 pieces of corn
1 red onion, diced
1 cup cilantro, shredded
1 jalapeno, diced
2 avocado, chopped
Lime
Sea salt and pepper

Turn grill on high.  Soak corn in cold water for 30 minutes.  Place corn on grill with husk on for 10 minutes, rotating every few minutes.  With mitts on, peel back husks and grill corn directly on the grill for 10 more minutes, rotating every few minutes.  Once corn cools, cut off husk into a bowl.  Add onion, cilantro, jalapeno, avocado. Squeeze in lime and add sea salt and pepper. Serve cold. 

Kelly’s Salad

Bowl of spinach
Toasted pine nuts and pumpkin seeds
Bunch of tomatoes
Avocado

Dressing:
1 clove garlic
1/4 t. salt
1 tsp. dijon mustard
2 T. white wine vinegar
1/2 cup olive oil
Dash of sesame oil
Sea salt and pepper
Whisk or blend ingredients together.
