A recent online NPR article gave celeriac (otherwise known as celery root) the title of “The Vegetable World’s Ugly Duckling.” So it’s not the prettiest vegetable with it’s rough, knobby skin… but my, does it taste good!
Celeriac is a root vegetable that takes an astounding 112 days to grow and is in prime form for the cooler months ahead. Let me assure you that it’s well worth the wait. High in fiber and minerals, this nutritious veggie has the consistency of a potato with much less starch.
This recipe is a *must* for your Thanksgiving dinner. In my opinion, it’s even tastier than mashed potatoes.
Mashed Celery Root with Chives
Ingredients:
3 Celery Root Bulbs
Coconut Oil
Sea Salt
1 Bunch Chives
Instruction:
Preheat oven to 375 degrees. Peel the celery root bulbs, revealing the soft smooth inner part of the bulb. Chop into 1-2 inch pieces. Put in a roasting pan with a few tablespoons coconut oil. Roast for approximately 50-60 minutes or until a fork can easily poke into the veggie. When roasted, transfer the celery root into a high speed blender or food processor along with any leftover coconut oil from the roasting pan. Blend until you get the consistency you want. Empty into a bowl and add sea salt and pepper to taste. Chop up chives and mix in. Serve.
I had several dinner guests comment that this dish tasted like the best mashed potatoes they had ever had and that they felt guilty for liking it so much. We should never feel guilty about food - after all, it’s just food! - and the simple, natural flavor of this vegetable is something that we should all enjoy this season.
